Get to Know Your Beans
Did you read the article about “cupping” in the print version of our newsletter last month? Here’s a little more detail on how it’s done:
> roast a sample > grind it fine > add boiling water > remove the crust of grounds that forms on top as the coffee cools > use a spoon to slurp up a taste > run the coffee across your tongue > identify its characteristics > spit (that’s our favorite part) We use cupping to make sure every single Cravens bean is as good as it can be. It’s just one part of our overall quality control program. A World of Coffee
If you look at a list of Cravens’ coffees, it reads like a world atlas. We buy beans from Africa, Central America, South America, Asia – in fact, just about everywhere they grow coffee. And while I don’t personally go to each of those places to pick up every single bag of coffee, we send someone out to research all the coffee we buy. Sometimes I go along for the ride, too.
There’s a reason for that. Coffee is an agricultural crop and so many variables affect the quality of the brew that ends up in your cup. If I want that cup of coffee to delight you – and I do – it helps to get my hands in the dirt where it’s grown, talk to the farmers who work so hard to grow it, and see how it’s processed after the harvest.
